I come from a family of golfers. It’s always on TV at home, there’s always a tournament to attend, golf clubs scattered around the house. So with it being Masters week, it’s pretty much 24/7 around here.
Anyone who’s been to the Masters knows that golf may be the main thing you’re going to see, but the egg salad & pimento cheese sandwiches at Augusta National rank a close second. They even put them in green baggies so that in case you don’t hit the trash can with it when you’re done, they won’t show up on TV in the grass.
When I attended the Masters a few years ago, I had a hard time choosing between these two sandwiches so I did what anyone who’s been on a diet their entire life would do: purchased both! They are equally delicious!
In honor of Masters week, I’m sharing my (not-so) famous pimento cheese recipe, which has gotten rave reviews among the friends who have sampled it. Which is currently numbering about 12. Preparation time is less than 10 minutes.
Cream Cheese: 1 block
Shredded Cheddar Cheese (mixture of sharp & mild): 2 cups
Goat Cheese: 5 ounces
Pimentos: 1 small jar (do not drain)
Garlic Powder: 1/4 teaspoon
Onion Powder: 1/4 teaspoon
Mayonnaise: 1/4 cup
Mix all ingredients together in a large bowl using a hand mixer, cutting cream cheese into smaller chunks. Mix to desired consistency…shorter time for chunkier pimento cheese.
That’s truly all there is to it. Serve it on crackers or a sandwich while watching the Golf Channel. You’ll feel like Jordan Spieth is right there with you.
